The famous greek "tzatziki"! A very fresh and cool salad which can be also served as a dip...
1 medium cucumber, peeled and finely chopped
½ kilo of yoghourt
1-2 tablespoons of vinegar
¾ cup of olive oil
½ teaspoon salt
1 tablespoon chopped dill
2-3 cloves garlic, minced finely
Combine all ingredients in a bowl. Mix until well combined. Chill for at least 2 hours before serving.
Serve as a dip, with fried fish or with fried eggplants and zucchinies or even with sticks of fresh vegetables as carrots, cucumbers, selery etc. It may also accompany perfect small meatballs or kebabs.
