Tomatokeftedes (tomato balls)

Amazing, tasty, extra flavorsome tomatokeftedes that you must definitely try! 

Ingredients: 

600gr. small tomatoes
1/2 cup red onions, finely chopped
1/2 cup spring onions. finely chopped
1/4 cup fresh mint, chopped
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1-2 tablespoons oregano
salt, freshly ground pepper to taste
1 cup bread crumbs
100gr. self-rising flour
extra virgin olive oil for frying
Greek yoghurt to serve

Rinse the tomatoes well and dry with paper towel. Transfer to a large bowl and pinch the tomatoes so the pulp comes out and you are left with a smooth mixture.
Add the onions, mint, basil, parsley, oregano, salt and pepper and mix well. Add the bread crumbs and the flour gradually until you reach a thick but moist sticky paste. Do not make the paste dry.
Pour some olive oil in a large frying pan to a depth of 3 cm. When the oil is hot but not smoking, carefully drop in tablespoons of the mixture and fry, in batches, for 2–3 minutes, turning once, so that both sides are light golden and cooked through. Place them on paper towel, to absorb the extra olive oil. Serve immediately with Greek yoghurt.

Tip: 

You may add a cup of kefalotyri (Greek yellow hard cheese) in the mixture, if you wish.

As for the herbs, you can make your own combination, according to your taste. Dill, parsley, basil, parsley, oregano, thyme are some of the herbs that match perfect with tomato...
