Spanakorizo (spinach rice) with herbs

It's a very simple recipe, so much tasty and full of vitamins...

Ingredients: 

1 kilo of fresh spinach, scalded
1 cup of rice
300gr of spring onions (chive), chopped
1 bunch of parsley,chopped
1 bunch of dill,chopped
¾ cup of olive oil
200gr of tomatoes, peeled and chopped
salt - pepper
1-2 lemons (juice)

Saute spring onions, parsley and dill in olive oil. Add spinach and saute until limp. Add tomatoes, 2-3 cups of water, rice. Sprinkle with salt and pepper and simmer until rice is cooked and all liquid is absorbed. 

Tip: 

Before you serve, pour the lemon juice.

Optionally, you may add  some selery, chopped. It gives excellent flavor to the food.
