Salad with bulgur, arugula and goat cheese

Health and freshness, taste and color... all in a salad which can be served as a light main dish!

Ingredients: 

1 1/2 cups bulgur
1 cup white goat cheese, cut in small pieces
1/2 cup walnuts, chopped
1/2 cup pomegranate seeds
1 small bunch arugula, washed, dried and torn
1 small bunch mint, finely chopped
2 teaspoons honey
1 tablespoon apple vinegar
1/2 cup olive oil
salt & freshly ground black pepper

Boil the bulgur in water, strain and mix in a large bowl with the small pieces of the white goat cheese. Add the chopped walnuts and the pomegranate seeds. Add the mint, finely chopped and the arugula washed, dried and torn. Toss until well mixed. Mix honey, apple vinegar and olive oil and pour the mixture over the salad. Sprinkle with salt and freshly ground pepper and serve.
