Chick pea soup is a healthy and nutricious food, so easy to cook... It is relished especially in the winter months.
400 gr. chick peas
1 tablespoon of baking soda
1 big onion, finely chopped
3-4 tablespoons of rice
2 teaspoons of corn starch
juice of 1 lemon
salt & pepper
4-5 tablespoons of olive oil
Cover chick-peas with plenty of water and leave overnight to soak. Next day drain away the water. Put them in a pot, add the baking soda and enough cold water to cover them (about 5-6 big cups) and stir well. Bring to a boil, add the onion, salt and pepper and let simmer for about 40 minutes. Then, add the rice. After about 10 minutes or when chick-peas and rice are done, dissolve the corn starch in the lemon juice and pour the mixture in the soup. Bring to a boil again for 1-2 minutes. At the end, add the olive oil and serve
It is served hot with olives and bread.
It can be served as an appetizer before a full course meal.
