Ravani with coconut flakes

A delicious cake full of coconut flavor... really incredible!!!

Ingredients: 

1 ½  glass of coconut flakes
1 ½  glass of self rising flour
1 teaspoon of baking powder
1 glass of sugar (or ½  if you don’t like to be very sweet)
1 cup of olive oil
4 eggs
2/3 cup of milk
2 tablespoons of cognac
vanilla


For the syrup: Boil for 5 minutes 1 glass of water, 1 glass of sugar, 1 tablespoon of lemon juice and a piece of lemon peel.

Mix in a bowl the flour with the coconut flakes and the baking powder. Beat the olive oil with the sugar very well. Add the eggs one by one and continue beating. Add vanilla and cognac and then add the mixture of  the flour, baking powder and coconut flakes in alternation with the milk little by little. Butter a baking tray and pour the mixture inside it. Bake in a moderate oven  (180ο C) for about 35 minutes. Let it cool and then pour the syrup little by little on the top and allow to soak. Sprinkle some coconut flakes on the top and serve.

Tip: 

It's better to let it cool and absorb all of the syrup before you serve it. 

Use the same capacity glass in order to measure all the ingredients.
