Pear and Vanilla fruit Crumble
A favorite, humble and... " innocent " sweet for all times ! Extremely rich in flavor and nutricious ... hot or cold ... always delicious!
For the crumble :
200g . digestive biscuits, crushed
50g . cereal flakes, crushed
1/2 cup walnuts, finely chopped
1/2 cup brown sugar
100g . flour (for all purpose)
1 tbsp. ground cinnamon
100ml extra virgin olive oil
For the filling:
800g . pears
250g . vanilla fruit
2 tbsp. flour (for all purpose)
2 tbsp. brown sugar
1 lemon (zest and juice)
pinch of salt
Wash, peel and remove the seeds and cores from the fruit. Cut them into 1 cm cubes.
Place them in a large bowl and add all of the remaining ingredients for the filling. Toss to combine.
Spread mixture in a pyrex or baking dish.
Preheat oven to 180* C / 350* F.
In a bowl, add all of the ingredients for the crumble, apart from the olive oil. Mix with a spoon.
Add the olive oil and pinch mixture together with your hands until you get coarse crumbs.
Spread mixture over fruit in baking dish.
Bake for 30-40 minutes, until the fruit soften and the crumble becomes golden brown and crunchy.
