Mixed Cabbage & Carrot salad with pomegranate and croutons

Α very fresh salad that “escapes” from the ordinary and accompanies pleasantly every meal!

Ingredients: 

½ cabbage
a few lettuce leaves
1 big carrot
½ red pepper, cut in pieces
½ onion, chopped (optionally)
pomegranate seeds
a few croutons
a little salt

For the dressing:
juice of ½ lemon
1 teaspoon of mild mustard
1 teaspoon of honey
½ cup of olive oil
 

Clean and wash the lettuce leaves. Dry and cut them into thin strips. Shred and salt the cabbage and rub it with hands to wither. Clean, wash and grate the carrots and mix them in with the cabbage and the lettuce leaves. Add the chopped onion and the pieces of the red pepper. Beat all the ingredients for the dressing in a blender (or mix well in a small bowl with a spoon) and pour it over the salad. Garnish with the pomegranate seeds and a few croutons.

Tip: 

There is no need to add salt to the dressing because the cabbage is already salted!
