Lemon roasted chicken

Roasted chicken is one of our favorite dishes at home, especially for my son. The taste of lemon smells fantastic and gives flavor to the potatoes. Fabulous, juicy... makes a great main course for the whole family. 


4 chicken legs
1 1/2 kilos baby potatoes, clean
1 green pepper, cut in squares
1 clove of garlic, minced
1 lemon (juice)
1/2 cup of olive oil
dry oregano
salt, fresh grounded pepper

Preheat oven to 220oC. Arrange chicken, potatoes and peppers in single layer on a baking pan. Sprinkle with dry oregano, seasoned salt and fresh grounded pepper; toss to coat well. Combine 1/2 cup of olive oil, lemon juice plus the clove of garlic minced in a small bowl. Pour the lemon mixture over all - you may throw the lemon rinds into the baking dish too. Add 1 cup of water and roast for about 45 minutes. Turn chicken and stir vegetables. Roast 45 minutes longer or until chicken is cooked through and potatoes are tender.
