Karydopita (Walnut pie)

"Karydopita" is the traditional greek walnut pie, a really delicious recipe...


120 gr. sugar
150 gr. olive oil
5 eggs
250 gr. semolina
200 gr. walnuts (chopped)
2 teaspoons baking powder
1 ¼ tablespoons cinammon powder
2-3 tablespoons cognac
For the syrup: Boil for 5 minutes 1 ½  glass water, 1 ½  glass sugar, 1 cinammon stick

Mix semolina with baking powder and cinammon powder in a bowl. Beat olive oil with sugar very well. Add eggs one by one and continue beating. Add cognac  and mixture with semolina, baking powder and cinammon and continue beating. Add walnuts little by little in the mixture and mix all the ingredients together with a spoon. Butter a baking tray and pour the mixture inside it. Bake in a moderate oven  (180ο C) for about 35 minutes. Let it cool and then pour the syrup little by little on the top and allow to soak.


You may serve either net or with ice cream (it matches perfect together).
