Kale salad with olives, capers and pistachios

 Kale is superfood ! It is tasty, healthy , full of vitamins and antioxidants and you can eat it either raw in salads or cooked. We boiled kale before we put in our salad  along with olives, capers and pistachios and the result was amazing... Delicious and nutricious!

Ingredients: 

1/2 kilo / 1 pound kale
2 tbsp. shelled pistachios
2 tbsp. capers (or caper leaves, even better)
8-10 black olives (pitted)
salt and freshly ground black pepper
1 cup extra virgin olive oil
1 lemon (juice)

Boil kale in lightly salted water for about 10 minutes. In a large salad bowl, combine the boiled kale and capers, olives and pistachios. Season with salt and pepper to taste. Dress with olive oil and freshly squeezed lemon.
