Fig Goat Cheese Appetizer

1 refrigerated pie crust (softened as directed on box)
25 teaspoons of goat cheese (about 150 gr.)
1/3 cup fig jam
a little olive oil for brushing
Heat oven to 425°F. Unroll pie crust onto work surface. Using a knife, cut 25 squares from crust. Place about 1 teaspoon of goat cheese (or less) and about 1/3 teaspoon of fig jam on each crust square. Fold dough over filling forming a small purse (as you see in the picture).
Brush with olive oil. Bake 11 to 13 minutes or until edges are light golden brown. Cool 5 minutes and serve.
These mini appetizers is better to be served warm.
