It's the lentil soup cooked in the greek way. A healthy and nutricious dish ideal for the whole family!


250gr. lentils
1 big onion, finely chopped
1 – 2 cloves of garlic
1 bay leaf
1 cup of tomato juice
2 tablespoons of vinegar
5 - 6 tablespoons of olive oil
salt, pepper

Pick and wash the lentils. Place them in a pot and cover with plenty of water.When they have come to a rolling boil, drain off the water. Put them back in the pot with new water (at least 5 big cups) and add the remaining ingredients except from the vinegar and the olive oil. Simmer the lentils for about half an hour. When the soup is ready, add vinegar and olive oil.


It is much more healthy to add the fresh olive oil at the end, when your soup is ready.
