Exotic chicken with nuts
Who is going to eat yesterday's boiled chicken leftover ? Follow this imaginative, exotic recipe and everyone would love to try ! No one would guess that this is a leftover inspiration...
600g . boneless boiled chicken leftover
2 tbsp. olive oil
4 allspice grains
2 tbsp. balsamic vinegar
3 tbsp. soy sauce
1 lemon ( juice and zest )
2 tbsp. flour
1 tbsp. curry
3-4 tbsp. unsalted nuts (peanuts or almonds)
1 tsp. honey
1/2 -1 cup water
1/4 cup chopped fresh parsley
a pinch of salt
fresh grounded pepper
Debone the boiled chicken leftover and put it in a large bowl.
Mix balsamic vinegar, soy sauce, lemon juice and lemon zest, flour and curry with a wire. Put the chicken into the mixture and leave for about five minutes.
Heat some olive oil in a nonstick skillet (or wok) and place the chicken in it. Turn the chicken on both sides until golden brown. Pour the mixture in the skillet as well. Add the water and allspice grains and stir until thicken the sauce. At this point, add the peanuts or almonds and boil for 1-2 more minutes. Turn off the heating and add the honey. Season with a little salt and more fresh grounded pepper and sprinkle with chopped parsley.
Serve with bulgur or rice.
Cooking Directions for the bulgur: One part bulgur to 2 parts water.
Bring water to a boil; add bulgur, stir and cover. Allow to simmer for about 15-20 minutes, stirring occasionally. Drain excess water.
