The famous chinese "Dumplings" in a very interesting variant with olive oil...
For the dough:
3 cups of all purpose flour (or special flour for dumplings)
up to 1 ¼ cup of water
¼ teaspoon salt
For the filling:
350 gr. of ground pork (or beef)
150 gr. large raw shrimps, shelled and de-veined, finely minced
1 leek, finely chopped
1 ½ cups finely shredded cabbage
2 small branches of selery, finely chopped
1 bunch of dill,chopped
1 or 2 slices fresh ginger, finely minced
2 tablespoons of olive oil
2 tablespoons of sesame oil
1-2 tablespoons of soy sauce
1 tablespoon of red dry wine
1 teaspoon salt
Stir the salt into the flour. Slowly stir in the cold water, adding as much as is necessary to form a smooth dough (not sticky). Don’t add more water than is necessary. Knead the dough, wrap it with a plastic wrap or a wet towel and let it rest for at least 30 minutes.
While the dough is resting, prepare the filling ingredients. Add the soy sauce, salt, red wine, pepper to the mixture of meat with shrimps, stirring in only one direction. Add the remaining ingredients, stirring in the same direction and mix well.
To make the dumpling dough: Knead the dough until it forms a smooth ball. Divide the dough into small pieces (about 60 pieces). Roll each piece out into a circle about 3 inches in diameter.
Place a small portion (about 1or 2 levels teaspoon) of the filling into the middle of each wrapper. Wet the edges of the dumpling with a little water. Fold the dough over the filling into a half moon shape and pinch the edges to seal well. Continue with the remainder of the dumplings.
To cook, bring a large pot of water to a boil. Add half the dumplings, giving them a gentle stir so they don’t stick together. Bring the water to a boil and add ½ cup of cold water.Cover and repeat. When dumplings come to a boil for a third time, they are ready. Drain and remove. If desired, they can be pan-fried at this point in olive oil.
For the filling, you may make your own combination of ingredients, according to your taste. For example, you may add scrambled eggs, carrots, spring onions if desired, or you may also add spicy green or red peppers.
