Coconut morsels with dark chocolate
Small, chewy morsels with the wonderful aroma and texture of coconut combined with the fine taste of "all time classic" dark chocolate... simply unique!
4 egg whites
200 gr. coconut flakes
200 gr. sugar
50 gr. self-rising flour
pinch of salt
1 tsp vanilla extract
1 tbsp honey
2 tbsp olive oil
150 gr. dark chocolate (couverture)
Put all ingredients together in a non-stick frying pan except from vanilla extract, and cook for 4-5 minutes over low heat until well combined. Remove from heat and add vanilla. Preheat the oven to 170° C/350 F. Take small amounts of the mixture with a spoon and with a second one "push" spoonfuls on a non-stick baking sheet, forming small irregular morsels on the paper. Bake for about 15-20 minutes, until golden brown. Allow to cool thoroughly. You can preserve 8-10 days in an airtight container. Melt dark chocolate in a double boiler (bain-marie). Dip the coconut bites partially or completely in the chocolate. Refrigerate until chocolate solidifies and then serve.
