Cocoa cake with orange juice, olive oil and without eggs!
Easy, healthy, soft, fluffy, and so much tasty that your family will surely love it!!!
¾ cup of olive oil
1 ½ cups of sugar
2 cups of orange juice
1 orange (zest)
3 tablespoons of red wine vinegar
6 tablespoons of cocoa powder
3 ½ cups of self rising flour (400gr.)
1 teaspoon of baking soda
a little salt
1/4 teaspoon of vanilla extract
Put all the ingredients together in a large bowl and mix until well blended (add the flour at the end). Pour the mixture into a cake form which is lightly oiled or buttered and bake in a preheated oven in 175οC for about 40 - 45’.
You may add, if you wish, 80-100gr. of ground hazelnuts or other nuts of your choice.
