Choco-banana muffins

Easy and tasty muffins with banana, coconut flakes and chocolate chips...
Try to make this simple recipe – it takes only a few minutes – using your ripe bananas and you‘ll find out  how mad everybody will become about it!


120 gr. of olive oil
140 gr. of sugar
3 ripe bananas
2 big eggs
1 teaspoon vanilla extract
300 gr. of self-rising flour
50 gr. of sweetened coconut flakes
120 gr. of chocolate chips

Preheat the oven to180oC.  Line two of 12 piece muffin tins with muffin liners or spread around 24 - 30 special paper cases for muffins in a large baking tray and set aside. Put in a blender the bananas (cut in pieces), the olive oil, sugar, eggs and vanilla extract and beat until smooth and creamy. Sift flour into a mixing bowl. Stir in the coconut flakes and the chocolate chips. Add the creamy mixture of bananas in the bowl and, using a wooden spoon, gently mix all the ingredients until just combined. Don't beat the mixture or the muffins will be tough. Divide the mixture in the special paper cases (not too much, about one spoon of mixture in each one is enough).
Bake for about 20 minutes, until they turn lightly brown. Take them out of the oven and transfer the muffins to a wire rack to cool.


Better serve them while they are still warm because the chocolate is liquid inside them and they are perfect!

The muffins can be stored in an airtight container for up to 4 days. You can preserve them in room temperature.
