Batzina or "Naked" kolokythopita
"Batzina" is a traditional pumpkin pie from the area of Thessaly, easy to make - as there is no pastry sheet up and down - and so much tasty! We find it in many interesting variations.
1.200 gr. pumpkin (only the flesh, clean and grated)
500 gr. feta cheese, grated
250 ml fresh milk
60 ml extra virgin olive oil
250 gr. self rising flour
2 tablespoons of parsley, finely chopped
2 tablespoons of mint, finely chopped
extra virgin olive oil (for the baking pan)
salt & pepper
Mix all the ingredients together with a wire whisk until thoroughly blended. Coat the baking pan with a little of olive oil and add the mixture into it. Pour ½ cup of olive oil all over the pie. Bake the pumpkin pie in the oven, 200οC, for 45 - 60 minutes or until knife inserted near center comes out clean. Cut in squares and serve either hot or cold.
