Baked fish "a la Spetses"

Try this recipe even if fish is not one of your favourite dishes and I'm sure you're gonna love it!


4 fish fillets in slices
1 big onion
2 minced cloves garlic
3 big tomatoes chopped
4 slices of tomato
½ cup of white wine
1 cup of olive oil
lemon juice (1 lemon)
1 laurel leave
10 – 12 black Kalamata olives (only the flesh)
2 tablespoons chopped parsley
salt – pepper

Wash fish fillets and sprinkle with salt, pepper and lemon juice. Place in a baking dish. Combine rest of ingredients, except olives and the tomato slices. Cook for about 15 minutes and pour over fish. Place one tomato slice on the top of each fillet and sprinkle with oregano. Bake uncovered in hot oven (200ο C) for about 30-40 minutes. 


Before serve, spread olives all around.
