The famous Chinese mooncakes in a very interesting variant with olive oil and almonds stuffing... just delicious!!!


For the dough:

600gr. flour
400gr. sirop sugar
150gr. olive oil
1 tablespoon of soda water
¼ teaspoon salt

For the filling:

600gr. almonds, chopped finely
1 ½ cups of sugar
1 cup of semolina
1 egg white
4 tablespoons of lemon juice
orange blossom water

Mix the ingredients for the filling. Add one tablespoon of orange blossom water and half a glass of water. Knead the mixture well and let it stand for a few hours. Mix the ingredients for the dough until smooth. Divide dough into portions (for each mooncake you’ll need about 50-60gr of dough and 40gr of filling). Flatten each piece of dough with the palm of your hand to form a 3’’ circle. Place one portion of filling in the center. Gather the edges to enclose the filling and pinch to seal. Place filled packet in the special for mooncakes mold, gently pressing to fit. Invert and remove the mold. Arrange mooncakes on a baking sheet and bake for 15-20 minutes at 180 - 200ο C . 


Let cool before serving.

You may use the recipe "sweet pie with dry fruits" in order to have another option for your "mooncakes".
